Carrot Cake


3 c. flour
2 c. sugar
2 tsp. baking soda
1 tsp. salt
2 tsp cinnamon
1 1/2 c. oil
4 eggs
3 c. grated carrots
1 c. raisins-optional
1 c. nuts-optional

Mix all of the dry ingredients together. Add oil & mix well. Add eggs one at a time and beat well. Add grated carrots and mix well. Pour onto greased cookie sheet (large). Bake at 350 for 20-30 minutes.

Frosting

2 c. powdered sugar (approximately)
4 oz. softened cream cheese
1/2 cube butter/margarine softened
1 tsp vanilla

Mix together with mixer.
