Cinnabon Cinnamon Rolls
DOUGH:
Add ingredients in order:
1/4 cup water
1 cup whole milk
1/2 cup melted butter
*mix*
1 large egg at room temp well beaten
1 tsp vanilla
1/2 tsp salt
1/2 cup sugar
1 env. SAF perfect rise yeast
*mix*
4 1/2 cups white unbleached bread flour
*knead dough*
FILLING:
1 cup light brown sugar
3 TB of cinnamon
1/2 cup butter at room temp
FROSTING:
4 oz cream cheese
1/2 cup butter
1 3/4 cups powder sugar
1 tsp vanilla
Let rise 1 hour. Then beat down and roll out on oiled counter into a rectangular shape. Spread butter first and then sprinkle filling. Roll up from the long side of the rectangle keeping the full length of your rectangle. Cut into 1 1/2 inch discs. Place on greased pan of choice. Let rise one hour.
Bake at 335 for 20 minutes
Directions for frosting:
Add cream cheese and butter to mixer on low for 6 mins. Then whip on high for 10 mins. Add 1 cup powder sugar, whip 1 min. Add 3/4 cup powder sugar, whip 1 min. Then add vanilla, whip 1 min.
NOTE: I don't know why the frosting instructions are so funky, but it works! I love how whippy this frosting is :) Also, I usually use the Kirkland brand salted butter. This last time I made the frosting I used Western Family butter. It was NOT as whippy :( The best part is the frosting! You want it just right :)

Pao De Queijo (aka Brazilian Cheese Puffs)
These things are like heaven wrapped up in a little puff! It is pronounced pow-je-kayjo. Chris had them all the time while he served his mission in Brazil & we've had them at Tuacano's as well. So I looked up the recipe & Chris made them. They taste exactly like the real thing & are actually super easy to make!
2 cups tapioca flour*
1 cup milk (Chris used 2%)
1/2 cup butter or margarine (he used margarine)
1 tsp. salt
1 1/2 cups grated Parmesan cheese
2 eggs
1 mini muffin tin
*We found tapioca flour at the Natural Grocer store next to Kohls in St. George. It is also called manioc starch or tapioca starch. This recipe will not work with regular flour.
Preheat oven to 400 degrees. In the mean time bring the milk, salt and butter to a boil in a sauce pan while constantly stirring the mixture. Once boiling remove the mixture from heat. Slowly add tapioca flour, stirring constantly until thoroughly mixed. Add the cheese and eggs to mixture. Mix until smooth (it won't be 100% smooth because of the cheese). Fill each mini muffin cup about 3/4 of the way to the top. Bake until lightly golden brown, about 16-18 minutes.
Eat while hot. Crispy on the outside, chewy on the inside! Delicioso!

2 tablespoons dry yeast
2 teaspoons salt
1 egg

1/3 cup butter or shortening
5-5 1/2 cups all-purpose flour or bread flour
Directions
1) In large bowl of electric mixer, combine water and milk powder, stir until dissolved.
2) Add yeast, then sugar, salt, butter, egg, and 2 cups flour.
3) Mix on low speed of mixer until ingredients are wet, then 2 minutes at medium speed.
4) Add 2 cups more flour; mix on low speed until ingredients are wet, then for 2 minutes as medium speed. (Dough will be getting stiff and remaining flour may need to be mixed in by hand).
5) Add about ½ cup flour and mix again, by hand or mixer.
6) Dough should be soft, not overly sticky, and not stiff.
7) (It is not necessary to use the entire amount of flour.)
8) Scrape dough off sides of bowl and pour about 1 T.vegetable oil all around the sides of the bowl so it is covered with oil.
9) Cover with plastic wrap and allow to rise in warm place until double in size.
10 (My note here- I just sprayed a clean large bowl with vegetable spray and put my ball of dough in there, turning to cover the dough with the vegetable spray.).
11) After dough has risen, sprinkle cutting board or counter with flour and place dough on floured surface.
12) Roll out and cut rolls in desired shape and size.
13) Place on greased (or parchment lined) baking pans.
14) Let rise in warm place until rolls are double in size (about 1 to 1 ½ hours).
15) Bake at 375 for 15 to 20 minutes or until browned.
2) Add yeast, then sugar, salt, butter, egg, and 2 cups flour.

15) Bake at 375 for 15 to 20 minutes or until browned.
16) Brush with melted butter while hot.
Ryan loves these rolls...I think they are a little bitter (probably from the dry milk) but a little honey butter or jam will sweeten them right up. Enjoy!!!
