This dessert tastes just like apple pie, but is way easier to make. It's a fun recipe to make with kids.
ingredients:
1 (21 oz) can apple fruit filling
6 (6 inch) flour tortillas
6 (6 inch) flour tortillas
ground cinnamon
1/2 C. granulated sugar
1/2 C. packed brown sugar
1/2 C. water
1/3 C. butter or margarine
Whipped cream or vanilla ice cream
1. Spoon fruit filling evenly down the center of each tortilla, and sprinkle with cinnamon. Roll up each tortilla, and place, seam side down, in a 2 qt. baking dish.
2. Combine both sugars, water, and butter in a saucepan. Bring to a boil over medium heat; reduce heat, and simmer, stirring constantly, for 3 minutes.
Pour sauce over enchiladas; let stand for 30 minutes.
3. Preheat oven to 350 degrees. Bake for 20 minutes. Serve warm with whipped cream and/or ice cream, if you'd like. Makes 6 servings

ReplyDeleteWe made this for dessert for Sunday Dinner for my inlaws today (along with Teresa's Chicken Tortilla Soup). It was a huge hit! We cut them in half so they would go farther and we drizzled the extra warm sauce from around the enchiladas over the scoop of vanilla icecream. My Mother-in-law had 4 servings and kept a few more for later! One brother in law said they looked pretty fancy. It was awesome how easy they were. :) Thanks Karen!
